Peach Pie Recipe with Mom's Pie Crust

Recipes are a little piece of family history. Like an heirloom, it’s something that connects us to our growing up years. One bite of that dish that your mom or grandma made can instantly take you back decades.


When I was growing up, pies were pretty special. With a large family, Mom didn’t have a lot of extra time to make fancy desserts–and any desserts she did make disappeared quickly! So any time we came into the kitchen and saw she was making pie, we got pretty excited.


It wasn’t just that the pie filling was yummy, but her pie crusts were so wonderful.


So today I want to share a Peach Pie Recipe with you using Mom’s pie crust recipe.


Mom's Pie Crust

Before we dive into the yummy peach filling, let's start with the foundation of any great pie – the crust. This pie crust recipe has the flakiness and flavor that store-bought crusts can only dream of.


Ingredients:

1 egg

2 Tablespoons lemon juice

1 Tablespoon vinegar

1⁄2 cup water

5 cups all-purpose flour

2 cups shortening

1⁄2 teaspoon salt


Instructions:

Prepare the Wet Mixture: Whisk together the egg, lemon juice, vinegar, and water until well blended.


Create the Crumbly Base: In a large bowl, use a pastry cutter to mix the flour, shortening, and salt until coarse crumbs form.


Form the Dough: For one pie crust, take about 1 cup of this crumbly mixture and gradually add the liquid mix, one tablespoon at a time. Combine until the dough starts clumping.


Roll and Shape: Transfer your dough to a floured surface, and gently form a ball. Roll out into a 12-inch circle, about 1/8 inch thick, and place it in a 9-inch pie dish. Follow the traditional finishing touches to create a beautifully edged pie crust.


Peach Pie Filling

Now it’s time to make the delicious peach pie filling.


Ingredients:

5 cups sliced peaches (we recommend our Sweet Peach Halves 🙂)

1 tsp lemon juice

1 cup sugar (reduce to 1/2 cup if using canned peaches)

1/4 cup flour

1/4 tsp cinnamon

2 tablespoons butter


Crumb Topping:

2 tablespoons butter

1/2 cup brown sugar

2 tablespoons flour


Baking Instructions:


Prep Your Peaches: Toss the sliced peaches with lemon juice.


Mix Dry Ingredients: Combine sugar, flour, and cinnamon in a separate bowl, then fold into the peaches.


Assemble: Pour the peach mixture into the unbaked pie shell, dot with butter, and sprinkle the crumb topping evenly.


Bake to Perfection: Start at 400°F for 10 minutes, then lower the heat to 350°F and bake for an additional 40-45 minutes.
